Chops (まぜそば 油そば らーめん チョップス) is a ramen shop in Tokyo which specializes in mixing style ramen like mazesoba and aburasoba, but also servers Jiro inspired tonkotsu bowls.
Opened at the end of 2021, they are trying to bank in on the ongoing trend of soupless ramen, for which shops sprout all over Tokyo. Chops tries to stand out with its sheer amount if variety, which lets almost everyone find a bowl that can be tailored to their liking.
Besides the choice between the 3 main categories if mazesoba, aburasoba and ramen, there are over a dozen of free and paid toppings which can be added in variable amounts. The level of customization of your ramen bowl that is possible at Chops is quite unique. This is further continued with a broad range of condiments on the counter, which can change the flavor of your meal midway quite dramatically. The thing I want to highlight here is the seasoned tenkasu, which is simply a great addition and severely improves the experience once you’re over half into your bowl and start to get tired of the flavors.
Overall, I would not call Chops a must go by any means, but it gets the job done and can be made to suit your current craving. Besides the Yoyogi location, there’s a second Chops location in Shibuya. Both are very easily accessible, so give them a try if you’re in the area and feel like some mazesoba or aburasoba.
