Ramen Hayashida / らぁ麺 はやし田 - Nakameguro
Ramen Hayashida (らぁ麺 はやし田) is best known for their incredible chicken shoyu ramen. However their menu is actually quite extensive and includes tsukemen, nodoguro fish based shoyu ramen and mazesoba.
In the video above, I wanted to showcase their incredible mazesoba, which tends to be overlooked by most. Compared to their regular ramen, you get a minimal amount of broth at the bottom of the bowl, which is combined with a good amount of fragrant chicken fat and their soy sauce based tare. The result is a more rich and condensed soup which clings to the noodles like a pasta sauce.
On the side, you will also get a very creamy egg yolk, sitting in some tare. I’m guessing it is cured in the tare, because it wasn’t completely raw. You also get a small slice of lemon. Once you receive you bowl, you also get some instructions from the staff for the recommended way to eat your meal. They recommend to add the egg after half of your noodles are gone and to add the lemon for the last couple of bites. Furthermore there is an option to get some very good white rice, which can be added at the end to soak up the leftover “sauce” to polish the bowl. I recommend adding it when you still have a few noodles left and mix it all together.
While the main shop of Hayashida is in Shinjuku, they have now multiple locations all over Tokyo with not only the Hayashida brand, but also other brands like Housenka, which I showcased in a previous video. I’ll surely be back to Hayashida to show their main items as well, so keep you eyes open!
