Preston is still going strong on his blog with the secret techniques to improve your ramen game. March gave us Upgrade Your Tare with Fermentation and Ramen Tare Umami Hack.
One of the more unfortunate ramen news in March was the attack on the ramen shop “Noodle Tree”, defacing the front of the shop with racist messages. On the flipside, the was a wave of love and support for the shop online and locally after the attack, showing that racism will not win in the end.

It finally happened. Nigel Ng aka Uncle Roger finally moved on from criticizing fried rice to criticizing ramen. Under the title “NIGELLA LAWSON So Pretty But CAN SHE MAKE RAMEN?” he closely watched a disaster in a pot unfold, surprising many with his ramen knowledge. No surprise, because he was coached by Cody from Ramenguidejapan.
Frank from 5amramen is currently touring through Kyushu if we can believe his Instagram. In his video “Best FUKUOKA Tonkotsu Ramen [Top 5]”…well the title kinda gives it away. Worth a watch if you ever make it down to Fukuoka.

I personally am a big fan of theses “a day in the life of” type videos. MOGUMOGU has published a video following the chef of ラーメンya in their video “町中華の1日に密着 - ラーメン・炒飯 - Old Style Ramen Restaurant - Day in the Life of a Chef - Japanese Street Food”
They are showing a lot of the cooking in the shop, so it’s quite interesting, even though it’s all in Japanese.
Recipes:
Getting back into more classic styles, Ryan from Way of Ramen published “Making Shoyu Ramen from Just One Chicken (kind of) Recipe” in which he does what the title promises.
If you are serious about ramen, you should already know about Ramen Rotas. March brought another round of great recipes, which are in Japanese but easy to understand even if you can’t understand Japanese. Check out this chicken shio recipe and then follow up with this Hachioji style shoyu ramen. And then just watch the whole rest of this channel, because it’s worth it.
Fast, and I mean FAST, tantanmen recipe by RamenCookingCH. Honestly just saving this here for myself, as I really want to try this out, as it is basically just whipping together things that can be found in every convenience store.
This Kyoto seabura shoyu ramen recipe by Yoshi no Jisaku Ramen Channel caught my eye and might finally motivate me to get a pressure cooker.
